I learned to make peace with those yellow flowers that pop up on the nice green lawn. They aren't weeds unless you say they are. So I say they are a side dish.
Those dandelions are packed full of nutrients, and vitamins A,B,C,D iron, and potassium. Dandelion greens help the liver and can be used in salad, or to make a tea. As for the health benefits, these little powerhouses control blood sugar, blood pressure, clean the liver, and boost the immune system. They are low calorie, too.

People have made tinctures and dandelion wine. Not me.
I dipped the flowers in egg, coated them with bread crumbs, salt, pepper, and Parmesan cheese. Fry in olive oil and a pad of butter until browned. And they were delicious! Then again, fry a shoe in bread crumbs and olive oil, and I'll be SOLED. Ha.
